It’s hotter than hot in my neck of the woods right now, which means it’s time to bust out that summertime standby: the Pimm’s Cup. Let’s all pour a glass, kick back, and remember the days when June was still cool enough to be enjoyed, and the Dog Days of Summer didn’t settle in until August. Sigh.
Pimm’s Cup
2 oranges, sliced
2 lemons, sliced
1 English cucumber, washed and sliced
2 cups Pimm’s No. 1
4 cups lemon lime soda
6-8 sprigs mint, lightly crushed
Fill two pitchers 1/4 full with ice. Layer orange slices, lemon slices, and cucumber slices, then top with Pimm’s and soda, evenly divided between the pitchers. Add the mint leaves and mix with a long-handled spoon. Imagine you’re at the Henley Regatta as you sip.
